StuffIKnowAboutFood > The Touch Test

Cutting into meat to know if it's done sucks, because then you have a nasty hole in your meat and all the juices run out. Thermometers are great for roasting but the instant-read kind need to be calibrated to be accurate. How do you test if your meat is done without hacking it up or, adventureously, eating it raw? Try the touch test!

Medium Rare
Hold your non-dominant hand out in front of you, at rest. Take your dominant hand and poke the fleshy part between your pointer finger and your thumb.
Medium
Take that same non-dominant hand, and touch your pointer finger and thumb to each other. Poke the same spot.
Medium Well
On the off chance that you would want to ruin your meat by cooking it this far, ball up your fingers and touch the mound behind your thumb.
Well
We shall speak of this degree of doneness no more.
