When storing lettuce (and similar, leafy greens) in the fridge, one of two things tends to happen:

  • The leaves turn brown
  • The leaves become wet and slimy and rotten

Proper storage can prevent both of these from happening. Fortunately, proper storage is easy! You have two enemies:

  • Air
  • Moisture

Now, these two are the flip sides of the same coin; you usually avoid the one by searching out the other. In this case, neither is your best bet. So

  • Place the greens in a plastic bag
  • Put a folded paper towel on top of the greens
  • Seal the plastic bag, squeezing out all of the air
  • Store the whole jobbie in the fridge

This makes two things happen:

  • No air! You just squeezed it all out
  • No moisture! The paper towel absorbs it all

As you eat the greens over a period of a few days, you may need to change the paper towel once. You'll know if you do.
