A roast -- or any large piece of meat you've just cooked -- will retain so much heat internally that it will cook on its own even after being removed from the oven. Rather than carving your roast straight away, cover it lightly with aluminum foil and let it sit about 20 minutes. Then you can carve your meat with impunity, rather than cutting into the meat and having all of the juices run out immediately.
