If you'd like a good, low-fat way to start your day, try these muffins. I even try to keep the total sugar content down! It seems like a lot of ingredients but it's acutally really quick and easy to make.

Dry Ingredients

  • 1 3/4 C whole wheat flour
  • 1/2 t salt
  • 3 t baking powder
  • 1 C oat bran
  • 1 C wheat bran
  • 3/4 C rolled oats
  • 1 t cinnamon
  • 1 t nutmeg

Wet Ingredients

  • 1/2 C brown sugar
  • 2 C apple sauce (unsweetened)
  • 3 egg whites
  • 2 T vegetable oil
  • 2 t vainlla
  • 1/2 C milk
  • 2 apples, peeled and chopped

Prep

Mix the wet ingredients in one bowl, the dry ingredients in another. Make an indentation in the dry ingredients and pour in the wet. Stir as few times as possible to mix -- the more your stir, the chewier the muffins become. It's possible to mix in just 3-4 stirs and anything over 6 is getting into the danger zone. Don't give it that last stir just to "be sure"!

Spoon into your muffin pan and bake. Temperature and length of baking will depend on your muffin pan size but baking times are pretty close to normal with this recipe. It's resistant to being over-baked so don't worry too much; it's done when a toothpick stuck deep into the top of a muffin comes out clean.
